Mastering Basic Mixing Methods

Task Description

Standards

In this activity, students will

  1. watch the “Mixing Methods in Baking” instructional video and complete the accompanying worksheet guide;
  2. create their own mixing methods instructional video using Flipgrid.

Culinary Arts III, Standard 16: Compare and contrast the variety of mixing methods used in commercial kitchens. Demonstrate and practice these methods determined by the nature of the ingredient and desired product. Mixing methods include, but are not limited to: beat, blend, cream, cut in, fold, knead, and whip. Either record a video or take a picture to demonstrate mastery of techniques to place in the student portfolio. Execute proper mixing techniques when mixing ingredients in labs.

Upon successful completion of these tasks, students will demonstrate the ability to:

  • identify the various mixing methods, including creaming, stirring, beating, blending, whipping, binding, folding, and cutting in, used in commercials kitchens;
  • demonstrate the ability to execute each primary mixing methods;
  • use clear and effective terms to describe the process involved in each mixing method

 

To move students towards deeper understanding, they should be given opportunities to:

  • Explain why it is important to use proper mixing methods in baking, illustrating with specific examples.

Mastering Basic Mixing Methods

Activity Steps:

  1. Students will first watch the “Mixing Methods in Baking” instructional video (running time: 7:25) and complete the accompanying worksheet to assess comprehension.
  2. Using the “Mixing Methods in Baking” instructional video as their model, students will demonstrate mastery of each mixing method by creating their own instructional video using Flipgrid. Note: Flipgrid allows a maximum video length of ten minutes. Students should strive for their instructional videos to be around 7-8 minutes.
